Geografski položaj Republike Hrvatske potpomaže razvoju osebujne vegetacije u kojoj se preko 1000 različitih vrsta samoniklog bilja može koristiti u prehrambene svrhe. Drijen, bazga, trnina, ogrozd samo su neke biljne vrste široko rasprostranjene u našoj zemlji. Prednost uporabe samoniklog bilja, kao sirovine za proizvodnju bezalkoholnih pića je u tome što raste u za njega optimalnim i prirodnim uvjetima, bez neposredne intervencije čovjeka, uporabe umjetnih gnojiva ili pesticida. Stoga će se u okviru ovog projekta ispitati mogućnost te uvjeti i opravdanost proizvodnje bezalkoholnih pića od samoniklog bilja (drijen, bazga-cvijet i bobica, trnina, ogrozd). Izradit će se optimalne recepture te procesni parametri, kako bi se proizvela orginalna i atraktivna visokovrijedna bezalkoholna pića. Od posebne je važnosti sačuvati visokovrijedne biloški aktivne spojeve (vitamine, pigmente, polifenole) tijekom prerade samoniklog bilja u poluproizvode i proizvode te ispitati njihovu stabilnost tijekom skladištenja. U mini pogonu za preradu voća i povrća provest će se probna proizvodnja spomenutih visokovrijednih proizvoda, a kakvoća će se ispitati primjenom senzorskih analiza, fizikalno-kemijskih analiza, analize fitokemikalija, antioksidativne aktivnosti i sl. Ovim projektom predviđeni proizvodi uklapaju se u svjetski trend popularizacije prirodne, izvorne hrane te "zdrave prehrane", a učinkovito bi se mogli koristiti i kao dio turističke ponude. |

Geographical position of Croatia assures abundant vegetation with over 1000 different varieties of wild plants that could be used in human nutrition.Cornus mas L, Sambucus nigra L, Prunus spinosa L are just some of the numerous widely spread plant varieties in our country.The advantages of using certain wild plants as raw materials in the production of non-alcoholic drinks is the fact that they grow in their native habitats without any human intervention like fertilising etc.Therefore, one of the aims of the project will be to examine, possibilities, conditions and to justify the production of wild plant based non-alcoholic drinks (Cornus mas L, Sambucus nigra L, etc.).In order to produce original and atractive non-alcoholic drinks, optimal recepies and processing parameters will be defined. It is of the outmost importance to preserve the valuable bioactive compounds (vitamins, pigments, polyphenols) during the processing of wild plants into semiproducts and products and to examine their stability during the storage time.In a pilot-plant for processing of fruits and vegetables, the preliminary production of the above mentioned valuable products will be conducted.The quality of those products will be tested using sensory, physico-chemical and phytochemical analysis, antioxidative activity etc. Products predicted by this project are part of world trend of popularisation of natural, authentic and healthy nutrition, and therefore could be used as a part of our touristic offer. |
